Devil’s Food Cake

Valentine’s Week: Pink Cupcakes
Why celebrate Valentine’s day for just one day when you can spread the love for a whole week? This week, we will post a love related dish every day. Today, a Valentine’s day dessert: pink cupcakes! <3
Ingredients
Cupcake Batter
50 g butter, melted
3 g baking powder
30 g sugar
50 g flour
1 egg
Frosting
1/2 cup confectioners' sugar, sifted
1/4 teaspoon vanilla extract
1/8 cup butter, softened
4 oz cream cheese
Procedure
Cupcake Batter
Beat the egg with the sugar. Add the rest of the ingredients and whisk. Pipe into cupcake molds and bake in the oven preheated to 374º F. Let cool.
Frosting
Whisk all the ingredients together. Place in piping bag and pipe over cold cupcakes. Sprinkle with colored sugar and decorate with a heart sprinkle.

Ingredients
100 g confectioners' sugar
Heart shaped sprinkles
100 g granulated sugar
100 g egg whites
Procedure
Heat egg whites and granulated sugar on a pan over low heat until a temperature of 122º F is reached, whisking constantly. When the temperature is reached, transfer to an electric mixer with the whisk attachment and mix at top speed until stiff peaks form. Add sifted sugar and mix gently with a spatula. Transfer mixture into a piping bag with a round tip.
On a silpat mat, place the heart sprinkles evenly spaced. Pipe meringue batter on top of each sprinkle, covering it. Place in an oven preheated to 248º F. Bake until meringues are dry and cracks appear on the surface, about half an hour.
Note: baking time will vary depending on the size of your meringues. My meringues were really tiny, so they didn't take too long to bake. You can see how small they were below!

Ingredients
1 Glass Orange Juice
7 Strawberries
1 Banana
Sugar
Procedure
Wet the rim of a glass and dip in a plate with sugar. Cut a couple of slices of the banana and make hearts with a heart shaped cookie cutter. Place banana scraps, clean strawberries and orange juice in a blender and puree. Pour into the glass and decorate with banana hearts.
